I’ve never liked scrolling past someone’s life story to find the measurements, so I won’t do that to you. The recipe is right here. The story — and it involves a chair dragged to my grandmother’s stove — is below, if you’d like to stay.
The Recipe
Serves a gathering · 10–15 minutes · no mashing (that’s the secret)
Ingredients
- 3 ripe avocados
- 3 tomatoes
- 1 onion
- 1 lime
- 1–3 teaspoons salt (I start at two — see my note below)
- ⅓ cup chopped cilantro, stems included
- A pinch of garlic powder
- A pinch of pepper
- Corn chips, standing by
Optional, to make it yours: 2 diced jalapeños for heat · ⅓ cup chopped mango for a summer twist · a little paprika or chili powder for depth.
Method
- Dice the onion into the bowl.
- Chop the tomatoes and add them, leaving the excess juice on the cutting board — juice in means runny guacamole. Rinse the board before the next ingredient.
- Finely chop the cilantro, stems included — most people throw the stems away without realizing that’s where much of the flavor lives.
- Squeeze in half the lime. Add one teaspoon of salt. Mix well.
- Now the part that makes this recipe ours: halve the avocados, cut the halves into cubes, and scoop them into the bowl. No mashing, no molcajete — the cubes stay tender and whole, and every scoop of the finished guacamole has something to bite.
- Add the pinch of garlic powder and the pinch of pepper. Fold everything together gently — you’re mixing, not mashing.
- Taste. (In this house, Cecil performs the quality check.) Adjust salt and lime to your liking, and serve.
My own settings: two teaspoons of salt and a bit more than half the lime — never quite the whole thing. But I cook the way I was taught to cook, which is to say I don’t really measure: start low, taste, adjust, trust your tongue. The recipe is a map, not a law.
The Story, If You’d Like to Stay
I grew up in my grandmother’s kitchen. Mama Victoria cooked fresh food all day, every day — there was no other kind of food in that house — and I would drag a chair to the stove just to stand beside her and watch her stir the refried beans. I can still smell them. I have spent a good part of my adult life trying to cook my way back to that smell.
Guacamole has been on Mexican tables since long before anyone wrote recipes down — which suits my family, since we never wrote ours down either. This one lives in my hands now: the same bowl, the same order, the same taste-and-adjust at the end, for years. It gets requested at every gathering, and friends who adjusted it to their liking now make their own versions at their own tables, which I consider the highest compliment a recipe can receive.
Here is the part that undoes me a little. I first wrote this recipe down years ago, before my children existed, and in that first version I wrote that replicating our family recipes was something I wanted to pass down to my — and I quote myself — (unborn) babies one day. I am editing this post with those babies asleep down the hall. Someday came. The chair I once dragged to Victoria’s stove has become the stool at my island — and the small hands that climb it don’t just watch anymore. They stir this very bowl, and they conduct their own solemn taste tests alongside their father, and they love guacamole the way only children of this family can. The inheritance isn’t waiting to be handed down. It’s mid-stir. Everything worth having came to me the same way it’s going to them: standing close, watching, and being handed the spoon.
